Let the Baking Begin!

Lots of cookie decorating to do today. Sugar Cookies for the holiday season & gingerbread cookies are baking today and keeping us busy! I had to scrape the ice off my windshield this morning in Pittsburgh, so I thought I'd show some of our mitten cookies. Wish I had a pair of mittens on this morning while I was scraping away at 6 am, but now the sun is shining and it should warm up today.

We're baking Black & Gold gingerbread cookies this year for our local Pittsburgh fans. For those of you not from the Burgh, these are our favorite colors around Pittsburgh, especially when the Steelers and Penquins are playing! Sports are BIG around this city. I wonder about introducing Black and Gold into the Holiday season as I am mostly a Christmas traditionalist but well, they are only cookies! And they really are cute.

Red & white are so bright and festive during the Holiday Season. These candy cane brownies are made from a deep dish chocolate brownie with chunks of Belgian white chocolate. After the brownie is baked and cooled, we then melt more white chocolate, drizzle it on the brownies and then add the perfect touch with crushed peppermint candy canes. Decorated Sugar Cookies in the shapes of candy canes are also included in the Holiday Cookie Box along with an assortment of homemade cookies from Chocolate Chip to Peanut Butter and Cranberry White Chocolate.

Thanksgiving Cookie Greetings

We have to start planning the Christmas Holiday Season at our bakery, Country Cupboard Cookies in August every year. To be honest, I start thinking about the next year's Holiday season during December while we are still baking and packing for that year. I know that sounds confusing, but the Christmas Season is our bread and butter for the whole year. I wish it weren't, I wish we could bake more consistently throughout the year, but the reality is that is that those 3 weeks of December is when we ship 30% of our gifts for the entire year! If we didn't have the holiday gift season each year, we wouldn't be in business.

BUT.....I love Thanksgiving and I don't want to miss a chance to bake with all the wonderful flavors of fall. Oatmeal Walnut Raisin cookies, Toffee chip cookies, deep dish fudge brownies, Snickerdoodles rolled in cinnamon and sugar, and Cranberry Orange Pecan cookies all make our bakery smell so fantastic this time of year. We 're hoping that we can send out lots of thank you cookie gifts this Thanksgiving! Take some time to bake something this fall, it's one of the best times of the year to enjoy fresh baked goods.

Halloween Gingerbread & Sugar Cookies

We've started decorating Gingerbread Cookies for the Holiday Christmas Season, but got distracted by Halloween. Red & Green colors started to look all the same, so we mixed up some orange and Black & yellow. Pumpkin head gingerbreads, dogs with orange and black bandanas, then Danielle got the idea to do gingerbread dressed in Halloween costumes. We ended up with pirates, dracula, mummy ( my favorite ) , bats, jack-o-lanterns, bats, etc. Lots of laughs with this production!

We're shipping our Halloween decorated sugar cookies next week. What a cute way to say Trick or Treat!

We will continue to think red & green next week for our line of gourmet holiday cookies, but this was a nice break. Decorated Sugar Cookies for Fall!

We brought out the fall colors today and they put a smile on our faces! Fall is our favorite time to bake cookies. The weather is starting to cool and it's before the crazy and hectic Holiday Baking Season. We look forward to baking our decorated gingerbread cookies for Christmas gifts, but for right now, fall leaves and acorns are on the menu. We baked these decorated fall cookies using our favorite sugar cookie recipe which is so easy to roll and is made with butter, sugar, eggs , flour and pure vanilla. If you want a touch of spice for your fall cookies, just add a teaspoon of cinnamon or 1/2 tsp of ginger when mixing your batter. Also, after baking and decorating, a sprinkle of colored sugar will give a nice crunch and we find cover any minor mistakes with decorating!

Love the tie dye look of these fall maple leaves! We used the technique of 2 colors of flood icing ( your thinner icing) applied to the cookie then allow the icing to run together using a icing spatula or toothpick to swirl nicely. Another technique is to flood the cookie with your main color, the orange in this case, then add a few drops of yellow flood right away. Use a toothpick to swirl. If you use this technique for tie-dye, be careful to add a little less flood on the first color than usual or your cookie will overflow.

We may be using this wonderful and colorful Baker's Twine from The Twinery this year for packaging some of our Cookie Gifts for Fall and the upcoming Holiday Season. I received this sample pack from the company and I just adore the homespun look. They offer so many gorgeous colors and we find the twine easy to work with. I think it makes our cookies look Simply delicious!

Lots of birthdays will occur this fall season and so we've decided to add some of our specialty Birthday Cookie Gifts with fall colors. Our acorn cookies need some work in the design, but we will be working on that, it's only September! Hope everyone enjoys the fall as much as we do here in Pennsylvania and happy baking!

Taking a break from Cookies

Baking is my passion in the kitchen. And baking cookies is my favorite. Farmhouse style, wholesome cookies made from scratch and filled with nuts, chocolate, fruits and spices. But sometimes, I still bake a pie or attempt cupcakes. Cupcakes and cakes are difficult for me, I'm not sure why. Maybe I'm so tuned in to creaming and mixing cookie batters that I just don't make the transition to cakes well.

I'm better at baking bread than baking cute cupcakes however. I love to get up in the morning and decide to bake a loaf of bread. I've baked all types of bread from Italian white to wholewheat to potato bread. I've baked sourdough breads, homemade pizzas and yummy rolls. I've done my share of kneading and also used a bread machine for years. This summer, I discovered the refrigerator bread or " bread in 5 minutes" This bread recipe has been around for awhile, I'm not sure how I missed it, maybe I was too busy kneading and rising bread. And I'm not going to give up all my bread recipes that require half a day to complete either. But when you want a super easy, quick idea for artisan bread, this recipe is amazing. I like to mix up a batch for 4 loaves, and bake one every other day. The bread dough will keep in the fridge for 2 weeks.

There is something about fresh bread coming out of the oven that is hard to resist. I have tried 2 recipes, both the white and also the whole wheat. I know there is a cookbook available, which I would love to try http://www.artisanbreadinfive.com/ or this website is wonderful also. I still can't believe I took so long to find these recipes. So if you need a break from chocolate chip cookies this summer, I think baking bread is a great adventure. Red, White & Blue Cookies

The Fourth of July summer holiday is coming soon so I thought I'd post some a few of our stars and stripes decorated sugar cookies. The colors of red, white and blue always remind me of summer, the colors just seem right for a hot summer's day. I like the simplicity of these decorated sugar cookies in shapes of stars. We are baking the stars in different sizes, frosting with royal icing and then rimming with sanding sugars. These cookies can be made easily at home, star cookie cutters are easy to find and if you don't want to bother with royal icing, just use a simple buttercream icing and add some sprinkles. The buttercream frosting we use here is so easy!

Easy Buttercream Frosting

2 LB Confectioner's Sugar

1/4 cup ( 1/2 stick ) melted Butter

1/2 cup Water ( approximate)

1/2 tsp Pure Vanilla

Mix the melted butter in a bowl with the sugar. Just mix until the butter is coating the sugar. Add the water slowly and beat until you like the consistency for frosting. Beat for 1-2 min for a creamy mixture. Add vanilla or any other flavoring you may like. This frosting is so easy to spread and sets up nicely at room temperature, but you can also place the cookies in the refrigerator to help set your icing. The key to this recipe is the amount of water you add, add slowly and if you add too much, you can always add more sugar.

I really like the look of white icing with colored sprinkles, but you could also use food dye to add some color to your frosting, just allow for the added liquid. Food dyes will thin your icing somewhat.

A Father's Day Cookie Delivery

Father's Day is June 19th, Sunday this year, 2011. We are starting to make our boxes and plan our baking for next week when we start to ship cookies for this special day. Cookies and brownies are a perfect gourmet treat to send for a Happy Father's Day message. I grew up on a farm in Southwestern PA where dogs and cats ran around outside with the horses chickens and pigs. Dogs and Cats did NOT come into the house and though we loved them, they were just another part of the farm animals family. Move ahead to 2011. Now our pets are living right next to us inside the house and yes, they are part of our family. We take photos of them with us, buy their favorite pet treats and include their names on certain gift cards. Although my parents still living on that farm have a Newfoundland dog that they adore and he lives outside with the horses and does not like entering the house.

He's way too large anyways.

On to the point of this post today. We noticed at our Cookie Bakery that customers were including their pets names on their gift cards, thanking their Vet for excellent care, sending thank you cookies to friends who watched their pet while they were on vacation, etc. We designed this box for those kind of occasions, a PET LOVERS BOX complete with a natural eco-friendly box and matching ribbon with paw prints.

Festive Happy Birthday Cookies & More

Still raining in Pittsburgh with not much sunshine yet for the first week of May, but I'm thinking summer colors! I really like these new colors of lime green, aqua blue, creamsicle orange and fuchsia pink. The Birthday cakes are very popular with our Cookie Gifts as they can be added to any homemade cookie assortment. Add a decorated Birthday Sugar Cookie to a box of freshly baked Chocolate Chip cookies and you've got a winner for any Birthday celebration. I also like the simplicity of the Daisy Cookies for the spring and summer!

We're shipping sweet Mother's Day Gifts today so I took one more photo of these adorable shoes and purse cookies. The combination of Pink and chocolate brown is nice too. I think we may add some other colors this summer for this line of decorated cookies. Maybe some chocolate brown with turquoise blue? Black is nice for handbags and shoes but not for cookies so I'm not sure about that combination. The problem with black is a lot of food dye is required for the frosting to attain the perfect black shade. So I think we will stay with more neutral colors. Maybe a tan and blue??

Cookies for Mom

I do not wear high heels because I am more concerned about my comfort than how I look, but I do love to look at them and appreciate how really special they can make an outfit. The longer you go without wearing a shoe with a heel, the more pain you are in when and if you do. So that said, these gourmet cookies are just so cute!! I do enjoy a nice handbag, no pain there.

No matter how busy I am each spring, I always find time to decorate eggs for Easter. Sometimes I'm in my kitchen late at night with 12 hard-boiled eggs and food dyes wondering why I keep this up when my daughters are adults now and my husband is more into carving pumpkins at Halloween than sharing this old family tradition with me! But each year, I find it relaxing and nostalgic and I do enjoy Egg Salad in the days after Easter! Here at our cookie bakery, we are busy decorating Easter Sugar Cookies in beautiful spring colors. The Easter Bunny Cookies are so cute also, and we're adding jelly beans to some of our Easter Gifts this year.

Polka Dot Easter Bunny Cookies

We mix our hand-rolled sugar cookie dough and after baking the bunny shapes, pipe the outlines of the cookies followed by a flooding in the same color. We then package the cookies after drying in clear cello bags and gift box them in chocolate brown boxes tied with sheer polka dot ribbon in purple, blue, pink and brown. We used the following recipe for these cookies. This sugar cookie recipe is so easy, does not require chilling, and is so easy to roll!

Cut-out Sugar cookies
Ingredients:
1 pound softened Butter
2 cups Sugar
2 eggs
1 TBL pure Vanilla
4 to 4 1/2 cups Flour
1 TBL Baking Powder
1 tsp Salt

Cream butter & sugar. Add eggs & vanilla & mix well. Add dry ingredients gradually and mix until soft dough forms. You may find that you need to use more or less flour depending on humidity of day, etc. Roll out and cut out with desired cookie cutter. Use only enough flour to avoid sticking to table or to rolling pin. Bake 8-10 minutes in 325- 350 degree oven. Avoid overbaking. Bake only until very light browned around edges. Frost and decorate with your favorite icing.

Salted Caramel Chocolate Chunk Cookies

My new favorite cookie: Salted Caramel Chocolate Chunk: Chocolatey, Chewy and Salty. We'll have these baking next week for the month of April in our bakery. I think they would make a wonderful cookie gift for someone who likes a little old-fashioned and a little gourmet in their cookies.

I've been craving these cookies for awhile now. I love chocolate, I love sweets, I love salt. I know salt does not have a healthy sound to it with all the talk of "too much salt is bad for your blood pressure" but I do love salt. Combine salt with my OTHER favorite flavor of Sugar and then add chocolate and something chewy ( caramel ) well, you've just tasted one of my new favorite cookies. I recently said that the blueberry cobbler cookies we were baking at Country Cupboard Cookies in March was my favorite, but well, it's a new month and this cookie, Salted Caramel Chocolate Chunk is my Favorite.

We baked this cookie using our original Chocolate Chip Cookie recipe, everyone has a favorite, just be sure to use butter and the best chocolate you have. We use Barry Callebaut chocolate chunks, a nice semi-sweet chocolate here in our bakery, but any high quality chocolate will work. Then we added bits of Caramel. We used caramel bits from CK products, but you could caramel bits from the grocery store. One thing I learned is not to use large sizes of caramel, you want small pieces, no larger than a chocolate chip. This way the chewiness is not over-whelming and you won't spend all your time chewing and not enjoying the rest of the cookie! Press down the cookie slightly before baking and then sprinkle a nice Sea Salt over the cookie. Bake as usual. I found that a lot of the salt does dissolve when you bake so I added a very slight sprinkle after they came out of the oven. Don't overdo the salt, just a surprise flavor while you are enjoying the caramel and chocolate!

Mini-Sugar Cookies for Spring & Easter

Spring this year brings our new Mini Sugar Cookies!

We are very excited about this line of sugar cookies. The size is small, 1.5 inches to 2 inches, perfect bite-size cookies. Everyone who sees them starts with "oh how cute!" or "So sweet! " The details are simple but for such small cookies, they really make a statement. We've chosen pretty spring colors, but I'm already thinking that later this summer we could decorate some of these sugar cookies in bright hot colors of orange, fuchsia and teal. The sugar cookies are made with a simple sugar cookie recipe, hand-rolled then cut with mini cookie cutters. We've flooded some of them and piped others with royal icing, also in springtime colors. Adding a sprinkle of sanding sugar gives a sparkly touch and a slightly crunchy texture to the cookies. They really do melt in your mouth!

I heard today that we may have snow coming our way this Friday. Well, it is November, so I won't be surprised but it's so sunny today it seems strange that winter could be coming so soon. I'm sure it won't be more than a few flurries, but the prediction made me think of the new snowflake gingerbread cookies that we'll be decorating soon. I love the contrast of the dark and spicy gingerbread with the white royal sweet icing topped with sugars. We've been baking gingerbread boys for a few years now, this year we are adding both the snowflakes and cute cottages. The aroma in the bakery is the very best this time of year with cinnamon, ginger, nutmeg, orange and chocolate! Yum.

Christmas Cookie Plans

I'm behind this year planning our Christmas Holiday Treats for our website, Country Cupboard Cookies. It's taking me awhile to believe that the season is near. In the Cookie Gift Business, the Holiday season is a stressful time. But we also look forward to it as there is an excitement in the air. Our entire staff is here and sometimes this is the only time during the year that we all get to work together. We manage to have fun despite all the stress and hard work each year, though each year I say 'never again! ' Seriously, how can a business expect to do 40% of it's annual business in just 6 weeks. Yikes.

But it's coming and we can't wait. Gingerbread are everyone's favorites. The bakery aromas are so wonderful and the gingerbreads are so fun to decorate. This year we're adding cute cottage houses and snowflakes to our gingerbread boy collection. And yes, we will also decorate girl gingerbreads.

Puppy Party!

We baked these for a a get-together party where a few dogs showed up. No, the cookies are not for the dogs, but we thought the pet owners would enjoy them. I thought they turned out so well, we are planning on placing them online for dog lovers to enjoy. They would be a great gift to send to a friend who loves dogs, or to thank a neighbor who took care of your dog while you were away or to a family who just added a new puppy to their household. Each month we bake a featured cookie for just that month, August is our Cowboy cookie. I think of it as a trail mix wholesome cookie. Based on an oatmeal cookie recipe, the cookie has m&m's, chocolate chips and pecans. People ask why they are called cowboy cookie, I'm not sure, but if I were out riding on a trail, it would be a great cookie to have with me. I haven't been out riding on the trail lately, but I certainly have in the past. My Dad is a cowboy of sorts, he still rides at 83 and keeps horses at the farmily farm in Pennsylvania. He's always talking about buying a ranch in Colorado, he hasn't yet, but you never know.

My favorite thing to do with this business is to create new recipes. I have to be careful that we don't have too many cookies, though, because I'm always dreaming up new recipes. And other people here contribute to that. For example, Danielle, just gave me a recipe for Key Lime Cookies. Now doesn't that sound good! When I get a chance to try those, I'll be posting a photo and sharing the recipe also. But back to the Cowboy Cookies. I got the idea this year to partner a Cowgirl Cookie along with the usual Cowboy cookie. But it was impossible to choose a favorite with the possibilities that we came up with. So we've decided to offer an assortment of three this month and see how they go. If they prove to be popular, maybe we'll continue them for the year. If not, maybe just an August thing.

The trio of Cowgirl Cookies includes the Signature Cowgirl: an oatmeal cookie very much like the Cowboy cookie without the nuts. Instead we've added semi-sweet chocolate chips and White Chocolate Chunks. The 2nd cookie has a kick to it with Dark Chocolate Chips, cinnamon and chipotle chili pepper powder. This is a new flavor combination for me, but my daughter has moved to Dallas Texas so she is always mentioning chipotle in this and that, thus the idea. The third cookie, the Wrangler, is my favorite. Oatmeal based with creamy peanut butter and milk chocolate almond toffee. The peanut butter softens the cookie and the toffee gives it a crunchy texture. Perfect! The cookies are sold in a cute chocolate brown box tied with twine and natural kraft fill. Kind of rustic and very delicious!

Recipe for Dirt

Recipe for Dirt ( Dessert that is)

INGREDIENTS:

1/2 cup softened butter
1 ( 8oz.) pkg cream cheese, softened
1/2 cup confectioner's sugar
2 ( 3.5 oz each ) boxes instant vanilla pudding
3 1/2 cups milk
1 container ( 12 oz) Cool Whip
32 oz. Chocolate Sandwich cookies ( Oreos)

DIRECTIONS:

Cream butter, cream cheese and confectioner's sugar in bowl. In another bowl, mix milk, pudding and Cool Whip together. Combine the two above mixtures together.

Chop Oreos ( I put the cookies in a ziploc bag, then use a rolling pin to crush them, but you can also use a food processer if you want finer "dirt " without chunks. )

Start with a container : You can use a dessert bowl or get creative and use a brand new flower pot, plastic beach bucket and shovel would be cute, childs plastic ( new) wheelbarrow, dump truck, etc. I've also used a plastic tray for a garden display with artificial flowers and gummy candies.

Layer in your container, starting with the crushed cookies ( dirt), then cream mixture. Repeat layers, then chill until ready to serve. Just before serving, add your accessories. For example, gummy worms for the flower pot, artificial flowers for the garden, etc.

Kids love this dessert and it's a great one for the hot summer months, NO oven required. As much as I love baking cookies and do almost daily at Country Cupboard Cookies, when the summer months come with the heat and humidity, the last thing I want to do on the weekend is run our oven. That's when the grill comes out and desserts like this one become more popular on my list. I've never tried other flavors of pudding, but I think chocolate pudding might be yummy for a chocolate treat.

This year we're doing shirts with ties, sporty shirts, striped shirts and a new tropical shirt! #1 Dad cookies are back again this year and I'm sure we'll come up with some new ones as the week goes on. I think cookies are really a nice gift to send for Father's Day, in fact, my Dad always receives a box of Oatmeal Walnut Raisin, his favorite! He always says "you can make a meal out of that cookie" Ha, especially if you enjoy more than two! One of my pet peeves is Chocolate chip cookies that are too flat. Some people enjoy a flat crispy chocolate chip cookie, but I think the perfect one is thick and chunky, but also moist and chewy on the inside with lots of chocolate! I want to taste the chocolate but also the butter.
Want Chocolate Chip Cookies that are thick and chewy? The perfect chocolate chip cookie is in the eye of the beholder ( or tastebuds I guess) but try chilling your dough for 24 hours. Make sure that you cover the dough with saran wrap or foil or just put in a covered container, then refrigerate. You may find it easier to scoop the cookies first then place in a ziplock bag and refrigerate. When it's time to bake the cookies, just take out your cookie dough balls & place on your parchment covered cookie sheet to thaw just for 10 minutes while the oven is heating. Bake as usual, maybe even 5 to 10 degrees lower if your dough is still cold. Watch closely, the cookies may brown sooner. The chilling does 2 things, it allows time for the butter in the cookie ( you are using butter aren't you? ) to coat the flour well providing a better flavor and also the butter is solidified, so that the liquid in the butter does not add to the flattening of the cookie.

The first cookie to come out of the oven at 6 am this morning are our very popular Snickerdoodle Cookies. The aroma is wonderful with the vanilla and cinnamon sugar. The cookies are soft in the middle but crunchy & light and will melt in your mouth for the perfect accompaniment with your morning coffee. This soft sugar-like cookie is rolled in a mixture of cinnamon and sugar that reminds me of my childhood when we enjoyed cinnamon toast for breakfast each morning. I remember serving cinnamon toast to my daughters also, we kept a lidded jar of the cinnamon sugar mixture in the cupboard ready to sprinkle on the toast each morning. I'm wondering if it is still popular among kids today?

Valentine's Day Breakfast

My husband mentioned that he was going to make eggs and toast for breakfast on Sunday, Valentine's Day so I decided to try my version of eggs-in-toast. The British version I've heard is toad-in-the-hole ( I think it comes from baking sausage in the biscuit), other names are eggs in a basket, I like eggs-in-the-hole. At first I thought this would be just a cute photo, but it's actually really tasty. The toast with butter and the egg combo is actually a perfect way to enjoy a fried egg.

To prepare the meal, I first buttered a pan & cut a heart out of the sourdough bread using a heart cookie cutter. If I tried this again, I would use a larger piece of bread and a larger cookie cutter, but this worked ok. I set the heart aside and then toasted the bread in the skillet on both sides to get a nice brown color. I then broke the egg into the hole and cooked the egg until done. I turned the egg once for "over easy" At the same time, I added the little bread heart I had cut out and toasted it also in the skillet to brown and crisp both sides. A little salt and pepper and this dish was complete. Oh, the bacon was my husband's contribution to the breakfast. This was yummy and I"ll try it again sometime.!

These Chocolate Hearts were made using a simple sugar cookie recipe and frosting with chocolate buttercream frosting, then topping with red & gold sugars and then piping swirls using royal icing. We made others with mini chocolate chips, m&m's, white chooclate and roasted pecan pieces. I just have to enjoy Chocolate on Valentine's Day and these cookies will fill that desire. Now I just have to decide whether red wine or a cup of espresso would go better with these yummy treats.

Valentine's Day Decorated Sugar Cookies

These mini sugar hearts are easy to make and decorate. We use a basic sugar cookie recipe posted below, but any sugar cookie recipe would work. Just roll the dough out using a small heart cookie cutter, bake and cool. To decorate, we used pink royal icing in a piping bag and added our decorations then sprinkled with pink sugars. Bite-size and perfect with a cup of coffee or tea.

Cut-Out Sugar Cookie Recipe

1/2 lb butter ( 2 sticks) 2 1/2 cups all -purpose Flour

1 cup sugar 2 tsp. Baking Powder

1 whole egg 1/2 tsp. Salt

2 tsp. Pure Vanilla

Cream softened butter and sugar together. Add egg and vanilla, cream well. Add dry ingredients and mix just until smooth dough, don't overbeat. That's it! Just roll out using flour on your rolling pin, use desired cookie cutter and bake in 350 degree oven approximately 8 minutes, just until slightly brown. Ovens are so variable, you'll have to watch them, be careful not to overbake as cookies will continue to bake after taken out of the oven. We take ours out when they are just starting to brown at the edges.

Comments: I love this recipe, it is so easy, no need to chill dough, rolls out so easily without sticking to the rolling pin. Be sure to use PURE vanilla, worth the added expense and always use BUTTER. If you like a crispier cookie, just bake a little longer.

We've changed our recipe for Chocolate chip Cookies this week. Not a big change, but after 20 years, things needed tweaked. So we increased the brown sugar and lowered the white. Increased the eggs and lowered the oven temperature. The result: thicker, chunkier softer and moister. Still crispy on the edges, I think this one is something special.

Love the colors of blue and white for these wintery mittens. We have snow on the ground for days now, so pretty and I know I'm not in the majority of people who feel so, but I think Winter should actually be cold with snow. So I'm happy these last few days. Usually in the Pittsburgh PA area, it snows then warms up and thaws with rain. This pattern repeats itself until we are left lots of potholes and no snow. So this year is different and feels right to me. I'm even wearing a scarf to work this year. And to make it even better, scarves are popular now so that I've got many colors to choose from!

But back to cookie baking. We outlined these sugar cookies with a border of light blue piping, then flooded with thinner icing and finished the details with white piping. I'm not sure why blue and white seem so perfect for the winter, but I think they are a very cute and heart-warming cookie.

We displayed and sampled our cookies at the Women's & Food Expo held this weekend in Monroeville Pa. For two days, we shared a booth with Basket Affair from Pittsburgh with their gorgeous gourmet gift baskets . We're tired from all the prepartions but we had a good time meeting new customers and other vendors at the show. I had time to walk around and talk to some of the local vendors, so many interesting stories to tell about small businesses out there. Everyone is trying to build and grow their own business, but also most seem enthusiastic about supporting others in their endeavors. Ginger Chocolate Chunk

A wonderful soft molasses & dark chocolate cookie

When I tell people this is my new favorite cookie, Ginger Chocolate Chunk, some are not so sure. Ginger and Chocolate? But it really does work, the chocolate is premium quality and dark. The ginger and cinnamon add just the right spice and the molasses and butter and brown sugar combine for just the right sweetness. And to make the cookie a favorite, it's crunchy on the edges and soft in the middle. I can easily enjoy one of these instead of lunch . It's our featured cookie of the month in September, will go away in October and November, but we will be returning it for the Holidays in December.

It's still supposed to hit 80 degrees today here in Western Pennsylvania, but last night was in the 50's so we know that Fall is coming soon. I've been waiting to bring out the fall colors of ribbons, I really love the natural cremes, chocolate brownies, deep reds, wine colors and warm yellow and oranges. We've decorated some new fall leaves and acorns. They should be available later this week online to order for cookie favors and in our assorted cookie gifts.

Chocolate Chip Cookies are the hardest cookie to bake, I think. Maybe the weather is to blame, one too large egg, not quite enough flour, overbeating the batter, the butter not at the right temperature, etc. But today I got it right! Slightly crispy on the outside, chocolate melting everywhere, buttery, melt-in-your-mouth texture, soft in the middle, well, enough said. I hope it doesn't sound like I'm bragging, but cookie bakers will understand. The cookie was worth the calories today!

I just finished baking a batch of our new cookie which we will feature the month of July, our RED, WHITE & BLUE Cookie. We start with our chocolate chip recipe batter, instead of chocolate chips, we add dried blueberries, cranberries and Callebaut White Chocolate Chunks. The sweetness of the white chocolate and the slightly tart flavor of the cranberries and blueberries create an absolutely wonderful cookie! I had to pack up the remaining cookies quickly to avoid eating more than one.
